How does gluten affect the body of a celiac person?

The ingestion of gluten in an undiagnosed celiac person ends up causing atrophy of the villi of the small intestine, not absorbing nutrients correctly, and generating nutritional deficiencies that can lead to serious and irreversible diseases.

Are Breadfree`s products maintain the texture and flavor as products with gluten?
